Hello Fresh

Back in September of 2017 we tried Hello Fresh for the first time and we loved it!  For about 3 months we used Hello Fresh and Blue Apron- which ever we felt like had the better menu for the week, but then Christmas time rolled around and with everything that was going on we canceled our subscription.  At the beginning of 2018 Peter started a new job which required him to travel again and not too long after that he began the interview process for his current job so there was never really a good time to resubscribe.  We've been talking about resubscribing for a while now and about two weeks ago we finally renewed our subscription. 

I scheduled for our box to arrive on Saturday so that on Sunday I could prep as much of each meal as possible.  {Meal prep changed my week night life about a month and half ago.  I wasn't the biggest fan of it while I was doing it, but during the week I was loving that I did so now I really don't mind it.  If you can meal prep I highly recommend it!}  For these meals it was cutting most of the veggies and herbs.


The box shipped out on Friday and arrived Saturday morning.  Everything was nice and cold when it arrived.  The ice packs were still frozen solid.  After I unpacked the box I put the ice packs in the sink to melt and they didn't completely melt until Sunday morning.  

In this box we got Figgy Balsamic Pork (with roasted green beans and rosemary potatoes), Chicken Pineapple Quesadillas (with Pico de Gallo and Southwest spice), and Juicy Lucy Burgers (with tomato onion jam and sweet potato wedges).  All of the meals cooked from start to finish in about 30 minutes, which I love!  

The first meal was Figgy Balsamic Pork with roasted green beans and rosemary potatoes. The pork was so tender and delicious.  So was the figgy balsamic sauce.  The sauce was sticky and did have a different texture, but it was so flavorful!  I don’t like green beans so I don’t eat them, but Peter said they were good and you can never go wrong with oven roasted potatoes!

The second meal was Chicken Pineapple Quesadillas with Pico de Gallo.  I LOVE pineapple so I was really excited to cook this meal and it was good, but not as good as I’d hoped.  Our quesadillas did get a little extra crispy {We do like them that way so didn’t ruin the meal for us, but if you don’t like the taste of extra crispy it might have ruined it for you.} because our broiler wasn’t playin’ around there at the end, but you live and you learn and I know for the next time.  The quesadillas were a little dry so I added some of the extra lime juice and that did the trick!

The third meal was Juicy Lucy Burgers with tomato onion jam and sweet potato wedges. This burger was filled with cheese and topped with a yummy tomato onion jam.  There was also a garlic mayo which I thought was tasty and just like with oven roasted potatoes, you can’t go wrong with sweet potato fries!

Each Sunday we'll choose three meals that will arrive at our door on Saturday.  This week we’ll have Ribeye with Tarragon Sauce (with roasted asparagus and garlic mashed potatoes) {This is a Gourmet Plus meal meaning we payed an additional fee for it.  We’re excited to try it!}, Pork and Veggie Bibimbap (with zucchini, carrot, and Jasmine rice), and Pulled Pork Fiesta Bowls (with tomato salsa, bell pepper, and Monterey Jack cheese).  I love that we have the option to skip a week (which we’ll need to do soon) without having to cancel our subscription and then restarting it when we’re ready to. I’m hoping it’s as easy at the app makes it seem!
